Smoked Salmon Chirashi Sushi: I made "Chirashi Sushi with Smoked Salmon and Brown Rice" for a New Year potluck party of a charity organization I belong to on Sunday, 1/11/2009. Some members are Chief Japanese Food Chef at a famous hotel and an experienced Sushi chef at a sushi restaurant. If I make shaped sushi, such as Rolled Sushi and Nigiri Sushi, my poor technique will show. So, I usually make chirashi (meaning "spread") sushi, Red Bean Rice, or desserts.
Ingredients (for 5 servings): *Brown Rice (4-gou, 720 cc) *Water one and a half times of brown rice (1080 cc) *Rice Vinegar 160 cc *Smoked Salmon 200- 300 grams *Brown Sugar: 2 to 3 table spoons for Rice, 1 table spoon for carrots *Soybean Curd 4 small pouches *Carrots 1 Medium to Large *Soy Sauce, Kelp, Soup Stock, Mirin (cooking sake), and Salt *Lemon 1 Medium
Direction: 1) Wash Brown Rice. Place it in a pressured cooker pot with water and Kelp. Cook it for 20 to 25 minutes. 2) Chop carrots and soybean curt into juliennes, cook them in a small pot with soy sauce, soup stock, brown sugar, and mirin. 3) After Brown Rice is cooked, leave it in a pot and steam it for at least 5 minutes. 4) When #2 is done, turn off the fire, leave it there with a lid on for at least 5 minutes to soak the sauce, and drain it with strainer. 5) Make Sushi Vinegar by combining Rice Vinegar and 2 to 3 table spoons of Brown Sugar. Add little Salt if you like. 6) Place cooked Brown Rice from #3 in a large Sushi-oke (wooden bowl). Mix it well with Rice Vinegar with a shamoji (wooden spatula). 7) Add and Mix in Carrots and Soybean Curd from #4. 8) Place the sushi mixture in a decorative Sushi Oke with a lid or a nice large plate. Garnish it with Smoked Salmon and thin-sliced Lemon.
I used Smoked Wild Sockeye Salmon caught in Copper River, Alaska, that my friend gave me. It could be other kinds of Smoked Salmon or grilled regular Salmon.

Several people brought "Sushi" as a coincident. One person brought lots of Inari sushi and Maki sushi from Sakae Sushi in Gardena. There were Korean Cold Noodles, Japanese style Potato Salad, Chinese Ramen Coleslaw, Char Shu Pork, too.

For desserts, there were Lemon Mouse Cake, New York Style Cheese Cake, British Triple (Short) Cake, Fugetsudo Rice Cakes, Chocolates, and etc. The Triple Cake had fresh strawberries, blueberries, and blackberries inside and on the top. The cream was not thick and light. (It was made by a chief Japanese chef at a famous hotel.)
